John Sparrow, owner of the Oyster Bar in the Vista, passes down this simply prepared dish featured at his restaurant. Beaufort Slaw can be enjoyed, of course, with a complement of Mother Shucker’s Original Cocktail Sauce.
1 head of cabbage, chopped
3 Tbsp Sugar
1 Tbsp Salt
½ Cup Malt vinegar
1 Cup Mayonnaise
1 Tsp Old Bay Seasoning
Mix all ingredients well and enjoy!
(Serves several and can be made ahead and kept in the refrigerator for a few days)
